fix(sunshine.nix): update CUDA package and disable pulseaudio
...
- Updated `cudaPackages` to `pkgs.cudaPackages_12_3`
- Changed `boost` version from `pkgs.unstablePkgs.boost186` to `pkgs.boost186`
- Disabled `pulseaudio.enable` and removed redundant `sound.enable`
